oyster mushroom & pancetta penne
serves 2

65g cubed pancetta
1 medium brown onion
4 cloves garlic
175g mixed oyster mushrooms
150ml single cream
200g penne
handful fresh flat leaf parsley
handful fresh dill
parmesan to serve

add pancetta to a large cold pan
-
steadily increase heat to medium, cook till crisp
-
remove from pan leaving fat behind
-
fry onion till golden in pancetta fat
-
add garlic in the last few minutes
-
season well
-
remove onion & garlic from pan
-
fry mushrooms in small batches till golden
-
return pancetta, onion, garlic & mushrooms to pan, add single cream
-
season to taste
-
add cooked penne to pan
-
loosen sauce with pasta water
-
mix through parsley & dill
-
serve with a mountain of parmesan
