Oyster mushroom and pancetta penne

serves 2


ingredients:

65g cubed pancetta

1 medium brown onion

4 cloves garlic

175g mixed oyster mushrooms

150ml single cream

160g cooked penne

handful fresh flat leaf parsley

handful fresh dill

parmesan to serve


  • add pancetta to a large, cold frying pan

  • steadily increase heat to medium & cook till crisp

  • remove from pan, leaving fat behind

  • fry onion till golden in pancetta fat

  • add garlic in last few minutes

  • season well

  • remove onion & garlic from pan

  • fry mushrooms in small batches till golden

  • return pancetta, onion, garlic & mushrooms to pan, add single cream

  • add cooked penne to the pan

  • loosen sauce with pasta water

  • mix through parsley & dill, season to taste

  • serve with a mountain of parmesan
