Oyster mushroom and pancetta penne

serves 2
ingredients:
65g cubed pancetta
1 medium brown onion
4 cloves garlic
175g mixed oyster mushrooms
150ml single cream
160g cooked penne
handful fresh flat leaf parsley
handful fresh dill
parmesan to serve
add pancetta to a large, cold frying pan
steadily increase heat to medium & cook till crisp
remove from pan, leaving fat behind
fry onion till golden in pancetta fat
add garlic in last few minutes
season well
remove onion & garlic from pan
fry mushrooms in small batches till golden
return pancetta, onion, garlic & mushrooms to pan, add single cream
add cooked penne to the pan
loosen sauce with pasta water
mix through parsley & dill, season to taste
serve with a mountain of parmesan
